Monkey, Crab, and I love roasted fruit. I just can’t believe I didn’t learn about this sooner in my younger years. I could’ve lived on amazing bananas for pennies on the dollar and enjoyed delicious roasted healthy desserts!
I place all fruit either cut up or bananas still in their wrapper on a sheet pan covered in foil. I hate to scrub off roasted bits, that’s why I use foil. I also keep around an old sheet pan for this job, too.
I roast the fruit anywhere from 10-20 minutes depending on what it is at 400 degrees or higher. Bananas turn brown and ooze goodness. Apples turn into the most amazing sweetened applesauce. Plums don’t get me started.
Anyway, just something to consider if you have a hankering for something sweet, but healthy at the same time. This is a great way to use up produce that may be starting to go bad as well. It’ll buy you a few more days of something delectable.
